Flipping Fantastic Salad Slaw!

I love all the different colors!

Hello everyone! I hope all is well! I've been such a horrible blogger and haven't blogged in so long! I've been busy (...and lazy). So not oobertastic! I also became a godmother to my beautiful baby niece! She was so cute! I love her so much! :)

I haven't really been experimenting with recipes in a while so I hadn't written anything. But, I made an awesome recipe today and I have to share it with you! It uses the bounty from the wonderful summer farmers market and you know the fresher the ingredients, the better! I love farmers markets and all its wonderful fresh choices! Summer is the best!

 Well, I'll shut up now! :) Here it is:

Flipping Fantastic Salad Slaw:
It's such a beautiful and tasty salad and even better when it's marinated overnight!

1 ear of corn, shucked
3/4 cup chopped broccoli
1/2 small carrot cut into thin matchticks
1 garlic clove minced
1/3 cup chopped red pepper
1/2 heaping teaspoon minced jalapeno pepper
2 1/2 teaspoons minced red onion
2 cups shaved cabbage (red or green)
2 fresh basil leaves, chiffonade
1 teaspoon chopped cilantro
1/2 lemon juiced
1/4 teaspoon salt, or more to taste
2-3 tablespoons cold pressed olive oil
black pepper to taste

Instructions:
Combine all ingredients thoroughly in a large bowl. Eat and enjoy!
