Yummy Sea Snacks

Hi everyone! I have such a great snack for you guys to try that is super easy and quick to make (at least as far as dehydrated treats go!). You will need a dehydrator for this recipe, but if you don't have one, discourage not! You could totally make this in an oven or toaster oven, but just be sure to watch it and make sure it doesn't burn because these treats can totally burn easily. I would have given you another photo but I ran out  of the house when I finished making them and gave them to my boyfriend who devoured them in two seconds! LOL! I hope you love them as much as he does!

These treats are made from nori, which are a sea vegetable that I certainly needed to acquire a taste for, considering I never ate any seaweed growing up, but now I'm beginning to take a liking to this stuff. I like the stuff and never really enjoyed it wet considering it gave a chewing weird feeling in my mouth (not to turn you guys off!). But my boyfriend lived in Japan when he was little, so he loves all seaweed, so this recipe was good for him and for me considering the seaweed was nice and crispy! Kind of like an oober healthy tortilla chip with a seaweed flavor and a little different texture... or just like a seaweed snack! :) What is also great about this recipe is that you could totally make any variation that you like and suit it to your tastes. I love garlic and cayenne, so I used that, but you could totally use onion powder, Italian seasoning, salt and pepper, curry powder, Chinese five spice powder, chili powder, ... The possibilities are endless! Do I feel a sweet cinnamon nori recipe coming? Maybe that would taste a little funny, but who knows?

I got the idea for these treats from a packaged treat called sea snax (here is their website) that are definitely strangely addictive as the bag says. Unfortunately they aren't raw so I decided to get my hands on making an all raw kind that are just as good but without that cooked oil taste (I just don't like that taste for some reason, lol!). And voila! I got it!

Anyway, enough talk and more recipe!
LOL! Sorry about the half eaten piece! I ripped a piece off of an unseasoned nori piece to see if my pooch was willing to try it. He tried it but wasn't too keen on it!

Yummy Sea Snacks
*(Oven method is below)

Ingredients:
2 sheets of nori, untoasted
1 teaspoon of extra virgin olive oil
1/2 teaspoon - 3/4 teaspoon garlic powder (depends on how garlicky you like them, I like a lot of garlic!)
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1/8 teaspoon cayenne powder (you could adjust this to how spicy you like it)

Directions:
Lay the nori sheets on the dehydrator sheets and brush the olive oil evenly onto each sheet on one side.

Then mix together the garlic powder, salt, pepper, and cayenne in a little bowl to combine.

Sprinkle the spice mix evenly onto each nori sheet and place the dehydrator sheet in the dehydrator at 105 degrees and leave for about an hour. Then rip into squares and devour! Yummers! Store in a tightly sealed container to retain crispness.

*Oven Method:
If you don't have a dehydrator, you could use your oven. Preheat your oven to 200 degrees Fahrenheit and place the nori evenly on a baking sheet without overlapping. Place in oven and watch it for about 2 minutes. Then check it. If it is not as crisp as you would like you could leave it in there for about 1 minute longer and check again.Just be sure to watch it!

Garlicky Coconut Chips

Hi everyone! It's been so long since I've blogged; I know. I'm such a terrible blogger. I think I just need to be a little bit more motivated and since I'm almost done with classes this semester, I will have a lot more time to get down and make some recipes! The thing is, I want every post to have a new recipe and I want the recipes to be good. So, when I make a recipe that I don't think is top notch, I don't want to post it. I also have not been making many new things lately so that is another reason why I haven't blogged.

But, I did make an awesome pumpkin pie for Thanksgiving and I must share it with you when I get the measurements right. I adapted it from sweetlyraw.com (by the way, she has incredible raw recipes!) and it was yummers!!

I also made some yummy garlic chips that are inspired by the spirulina chips that were made by Matt Monarch and Angela Stokes Monarch (also congrats on your baby girl!) from their blog therawfoodworld.com/blog . I didn't try the spirulina version but I made a simple garlic version that was sooo good!! I definitely recommend them as to me they tasted like garlic butter (weird but good!) and they are great on a salad or just to eat straight from the dehydrator (which I did many a time!). Garlicky Coconut Chips

Ingredients:
Coconut meat from 1 young Thai coconut
1/4 teaspoon Himalayan Salt
1/4 teaspoon ground black pepper
1 minced garlic clove

Directions:
Slice the coconut meat into 1/8 - 1/4 inch thick strips and place in a medium sized bowl with all the other ingredients and stir to combine evenly.
Place the mixture evenly on a teflex dehydrator sheet (or parchment paper) onto the screened sheet and place in the dehydrator that is set  at 120 degrees for one hour. After one hour, lower the heat to 105 degrees and dehydrate for about 20 hours or until the chips are crispy (it's long but so worth the wait!). Enjoy the yumminess!

I only had a few left when I wrote this. I ate most of them! Oops! :)

Flipping Fantastic Salad Slaw!

Hello everyone! I hope all is well! I've been such a horrible blogger and haven't blogged in so long! I've been busy (...and lazy). So not oobertastic! I also became a godmother to my beautiful baby niece! She was so cute! I love her so much! :)

I haven't really been experimenting with recipes in a while so I hadn't written anything. But, I made an awesome recipe today and I have to share it with you! It uses the bounty from the wonderful summer farmers market and you know the fresher the ingredients, the better! I love farmers markets and all its wonderful fresh choices! Summer is the best!

 Well, I'll shut up now! :) Here it is:

Flipping Fantastic Salad Slaw:
It's such a beautiful and tasty salad and even better when it's marinated overnight!

1 ear of corn, shucked
3/4 cup chopped broccoli
1/2 small carrot cut into thin matchticks
1 garlic clove minced
1/3 cup chopped red pepper
1/2 heaping teaspoon minced jalapeno pepper
2 1/2 teaspoons minced red onion
2 cups shaved cabbage (red or green)
2 fresh basil leaves, chiffonade
1 teaspoon chopped cilantro
1/2 lemon juiced
1/4 teaspoon salt, or more to taste
2-3 tablespoons cold pressed olive oil
black pepper to taste

Instructions:
Combine all ingredients thoroughly in a large bowl. Eat and enjoy!

Raw Vegan Mayo

Hey everyone! I am such a horrible blogger. I am never blogging! I have to really make time to blog! I've been so busy with juggling three jobs, but that is no excuse! I will try to be a better blogger.

Anyhow, any fathers out there I hope you had a happy and wonderful Father's Day (and a belated Mother's Day to all you lovely mothers out there! :o)  ). I have tinkered with a few recipes lately but not enough to perfect so there is only one recipe I have to share for all this time I have been gone, although I will be coming out with more soon!

The recipe I have today is a raw vegan mayo. It's yummers thinned out as a salad dressing, as mayo on a wrap or bread, or just eat  as is... Hehe... :o) I hope you enjoyed it as much as I did. It was so simple but yummy! I hope you enjoy it as much as I do! Sorry I don't have a picture of it but when I make it next time I'll be sure to post one!


Raw Vegan Mayo

1/2 cup soaked nuts or seeds (or a mix of the two)
1 small clove of garlic (or half of a larger clove)
1/4 lemon juiced (about 1 to 1 1/2 tablespoons)
1/4 teaspoon salt (or more or less to taste)
1/4 teaspoon of prepared mustard (the store bought ones are not raw, but any organic brand would do in this
     circumstance, or you could totally make your own using one of these recipes)
2 tablespoons of extra virgin olive oil
1/2 teaspoon maple syrup, date paste, or agave nectar
1/2 cup water or more to create the consistency you prefer

Place all ingredients in a personal blender and blend away! Enjoy the ooberness!

Yummy Salad!

It's not on the prettiest plate but still yummers!

Hi everyone. Hope you all are doing great. I know I am happy that school is going to be over soon and I can start to enjoy this beautiful weather we are having here. So gorgeous!

I hope everyone enjoyed their Easter or Passover or had a nice week last week. I spent the Easter with my mom, dad, brother, his wife, and their new baby girl. I love my little niece! Just can't get enough of her! :o)

Anyway, to bring to the festivities, I made a salad that I adapted from a recipe from Eating Well Magazine. Unfortunately they don't have the original recipe on their website, but the website has some recipes for inspiration. The original recipe was not vegan or raw so I adapted it to my tastes and it came out, I will say it, oober! My sister-in-law and mom loved it! The dressing and the spiralized noodles are what made it's ooberness and I will definitely make it again!

Sesame Cucumber Noodle Salad

1/2 - 1 zucchini spiralized*

1/2 cup of tahini (or use your other favorite nut or seed butter; the recipe used peanut butter)
1/3 cup apple cider vinegar
1/2 teaspoon olive oil
1 tablespoon soy sauce or tamari or nama shoyu or coconut aminos
2 pinches of cayenne powder
1/2 - 1 tablespoons maple syrup or sweetener of choice
1/2 cup thinly sliced scallions
3 tablespoons chopped cilantro leaves
3 tablespoons to 1/4 cup water (to get desired dressing consistency)

4-6 cups salad greens of your choice (I used cabbage, kale, and romaine lettuce)
1/2 medium bell pepper chopped
1/2 large cucumber, quartered lengthwise and cut into 1/4 inch slices
Salt and pepper to taste

*If you don't own a spiralizer, you could always shred the zucchini lengthwise or slice them a 1/4 inch thick lengthwise and then lay them on top of each other and slice them into linguine type strands.

Instructions:
Place the spiralized zuchinni into a large bowl along with the salad greens, bell pepper, and cucumber. Set aside.
Whisk the tahini (or nut/seed butter of choice), vinegar, olive oil, soy sauce, cayenne powder, and maple syrup to combine. It will be a little thick. Then whisk in the scallions and cilantro. Then add in the water to create the consistency and taste desired. I wouldn't make it too runny because you want the dressing to adhere to the salad. Add salt or pepper to the dressing if desired.
Plate the greens and add as much dressing as desired and enjoy the oober goodiness! :o)

Note:
The dressing tasted much better the next day because all the flavors got to meld together but it's equally delicious the same day.

Collar-ito!


Hi everyone! It has been a really long time since I've blogged but I hope to keep blogging more and more. I have been busy with school and just everyday life, so more will be coming to this blog, I promise!

Anyway, let's go to the weird title of the post. It's a blend of the word collard and burrito! I'm so silly but I love combining names like that. :o)  Today I made a collar-ito with such fresh and yummy ingredients that I thought I would share it with you. Usually I just eat my salads in a bowl and with a fork, but today I decided to spice it up and I'm sure glad I did! It's a salad in a wrap! Not that it's very original but the ingredients in it give it that special kick.

Well, enough with the blabbering. Here goes!

Collar-ito
Ingredients:
2 collard leaves with the thick stems removed (not the whole vein!)

2 tablespoons of onion, chopped fine
1 garlic clove, chopped fine
2 tablespoons red bell pepper, chopped 
1 medium avocado, chopped
1 teaspoon of lemon juice
1/2 teaspoon apple cider vinegar
sea salt and pepper to taste

salad greens, sprouts, and veggies of your choice (I used a mix of spinach, mesclun mix, cabbage, some chopped zucchini, and chopped cauliflower)

1/2 banana sliced into 1/4 inch slices

Dressing of your choice (or tamari, braggs aminos, coconut aminos, or nama shoyu)

Directions:
Once you de-stem the collards, put them aside for folding up for later.

Place the onion, garlic, bell pepper, avocado, lemon juice, vinegar, salt, and pepper into a medium bowl to mix and mash with your fork. Leave it a little chunky or smoother if you prefer. I had mine a tad chunky. Put this to the side while you prepare your wrap.

Place the wrap on your plate, with the inside of the collard leaf facing up. Start piling on some of the greens, sprouts, and veggies of your choice, maybe about a cup's worth. Then place half of the avocado mix on top of the greens and spread evenly across the length of the wrap. Then place half of the banana slices on top.

To fold, pull the flaps on the sides of the collard leaf onto the mixture inside the collard. Then start rolling the  wrap starting from the side facing towards you and roll and tuck in the ingredients as you roll, as if rolling a sushi roll, until all the wrap is rolled up. Cut in half cross-wise and dip into your favorite dressing or sauce! Yummers!! Enjoy!

Hi everyone! Thank you so much for coming to my blog! It is a work in progress  so I will have more information and pictures about the products I sell and where you can find them. Hopefully I will be expanding my line and this website to better suit everyone and the product.
