Happy new year everyone! I hope everyone enjoyed their holidays and are ready to take on the new year! 2012 is time for renewal and definite change, at least I believe it to be, and I could already feel the change within me. I don't think it will be the end of the world as Nostradamus said, but I do believe the world is going to be in for a great awakening. What are your thoughts on 2012?
In other news, the new year brought me back into a favorite treat of mine: kale chips! They are so freakin' good! What inspired me was a bag of the store bought kale chips that were on my boyfriend's kitchen counter that were tempting me with their yumminess! Needless to say, I was not disappointed when I tried them but was a little deterred by the price tag. I probably would not buy some of these on a regular basis on my budget, so that is where my creativity kicked in! I have made kale chips before but I decided to try to emulate what was in the store bought version and came up with this cheezy version. Much better than the ones I have made before! But the only bad part is that they are gone before I realize it and have to start making more! LOL! My mom and I have a little kale addiction going on!
Well, enough with the chit chat and more recipe! Here it is:
Cheezy Kale Chips
1 hearty bunch of kale, destemmed
1 1/3 cups soaked raw cashews (about 1 1/4 cup before soaking)
1/3 of a medium sized zucchini, roughly chopped
1/2 cup coarsely chopped red bell pepper
2 1/2 garlic cloves
1/2 lemon juiced
1 teaspoon salt
1 1/8 teaspoon chili powder
1/8 teaspoon cayenne (or more if you like more of a kick, or less if you want less of a kick)
1/4 teaspoon cumin
2 ounces water (enough to get the blades of the blender moving)
Directions:
Clean the kale and dry very thoroughly. Tear the kale into bite sized pieces and place in a large bowl and set aside.
In a high speed blender, add the cashews, zucchini, red pepper, garlic, lemon juice, salt, chili powder, cayenne, cumin, and water and blend until smooth.
Add the cashew cheezy sauce to the kale and massage it into the kale to make sure all the
leaves are coated quite generously.

Place evenly on 2 - 3 mesh dehydrator sheets and set the dehydrator temperature to 105 degrees and leave them for about 15 hours or until crispy.
Enjoy the oober yumminess!
